Content

Fats and oil

Fats and oil belongs to a group of compounds known as lipids. Fats are solids of animal origin, while oil are liquids of plant origin at room temperature. They are complex esters of Trihydric propane-1,2,3-triol(glycerol).

                 

The R groups e.g R1R2R3 in the fatty acid may be the same or different.

Fatty acids are classified as saturated and unsaturated fatty acids.
